At the end of September 2019 Lancaster’s award-winning restaurant Quite Simply French opened four glamorous guest bedrooms and joined the ranks of ‘Restaurant with Rooms’ – music to the ears of the growing legion of gourmet travellers, looking for the next must-visit destination.
The nine-month restoration process was a labour of love for Managing Director and owner of Quite Simply French, Robert Mason. Robert worked closely with Harrison Pitts Architects on the design of the rooms and many of its original features and contemporary additions are down to Robert’s impeccable sense of style; the three luxury boutique bedrooms and one suite, all with chandeliers, state-of-the-art lighting and designer bathrooms, bring a sumptuous ‘je ne sais quoi’ to this former warehouse on Lancaster’s historic dock.
“We are aiming to redefine the luxury overnight experience in Lancaster, in line with all our brand values of top quality, high standards of excellence and friendly, personal service. We believe the appeal of our restaurant with rooms will be the combination of a wonderfully relaxed vibe, an emphasis on great ingredients from the area together with local charm and stylish panache. We want our guests to feel utterly spoiled and very special. Our dedicated team will be offering the familiar, ultimate quality service everyone associates with Quite Simply French,” said Robert.
QSF, as it is fondly known in the city, was set up by Robert and French chef Sebastien Woeffle in 1996 and soon became a firm favourite with diners looking for fine dining in beautiful surroundings. Robert had never planned to buy a restaurant but the opportunity came up when he was 23 and with a £5,000 loan from his family, he went into business and has never looked back.
Since then, QSF has never looked back and is a testament to hard work and belief. Stick to your roots and values, understand your customers and always, without fail, aim higher than you ever thought was possible.
The restaurant has 100 covers and they employ about 20 staff. The team is long-serving, 20 years for Head Chef, John and 12 years for Restaurant Manager, Laura. Owner, Robert’s aim is, and always has been, to use his experience to train and help young people learn the important life skills that comes with working in the hospitality industry.
They champion low food miles and the amazing Lancashire produce with their great weekly offers, making it accessible for customers from all walks of life as well as being the go-to venue for important celebrations, from marriage proposals to retirement parties.

As we embark on our next phase of growth and cement our leadership position, our new vision – luxury, affordable bedrooms where our guests can enjoy a unique experience – provides us with new focus and momentum to take the business forward.”
