The Youngest Lancashire HotShot

debut at The Millstone at Mellor

Lancashire and Blackpool Tourist Board’s (LBTB’s) Lancashire Hotshots evenings this year have all sold out and17 years old Steven Amos, Commis Chef at The Millstone at Mellor, is hoping for the same success when he takes over the kitchen on Thursday 26th May – with a menu he has created especially for the event.  Steven is the youngest chef ever to take part in LBTB’s young chef event programme.

Chef/Patron of The Millstone, Anson Bolton, commenting on his Commis chef said “‘Steven has designed this menu completely on his own and I am delighted with what he has produced. It shows balance in flavor and addresses his skills level, whilst conveying the ethos and quality of the food here at The Millstone.”

Steven studied at Blackburn College and tried his hand at event catering before securing his current position, just over twelve months ago. “I was really pleased to be offered the position at The Millstone” said Steven. “It really is my preferred style of cooking and Anson (chef/patron) has ensured my training has continued through each of the sections in the kitchen. I still have a lot to learn before I achieve my ultimate goal of being the Head Chef of a Michelin starred establishment.”

Steven’s HotShot menu will be available on Thursday May 26th at a cost of £20 per person.

Cream of white onion soup, soft herb oil or

Pressed ham hock with homemade piccalilli

Mains

Grilled salmon fillet, spring green risotto, shaved parmesan or

Roast Goosnargh chicken breast, black pudding mash, crispy bacon, caramelised red onion gravy.

Desserts

Dark chocolate pot, Amaretto crumb or

Vanilla pannacotta, seasonal berry compote

The Lancashire HotShots programme was developed by Lancashire and Blackpool Tourist Board to help raise the profile of new talent working in the Lancashire food industry. It provides young chefs with the opportunity to take over the running of their restaurant for one night – under the watchful eye of their mentor Head Chef or Chef/Patron. 

This non-competitive environment allows the Lancashire HotShot to create their own menu and members of the public the chance to be amongst the first to spot a culinary rising star!
