AA Rosette Award for Park Hall Hotel Restaurant
A Lancashire restaurant has secured a prestigious AA rosette after impressing judges with its food and hospitality. Brookes Restaurant at The Park Hall Hotel, Chorley, received the award following an unnannounced visit by judges to its eatery.
Head Chef Jamie Kennard was delighted to accept the award on behalf of the hotel.
“It’s been great for everyone and the morale in the kitchen is very high,” he said. “This has set a benchmark now, so we’ll need tomaintain our very high standards and we will continue to have an excellent relationship with all of our suppliers.”
Jamie has worked at Brookes Restaurant for almost four years. His food continues to evolve, but he has always focused on clarity of flavour while sourcing the best core ingredients. This led onto his passion for cooking fish.
“It’s a delicate thing to cook well, but I love to create great fish dishes. Whenever we can, we always source locally produced food and cook with the seasons too, when food is at its absolute best.”
Hotel General Manager Gary Naylor added: “This is a huge achievement and we’re all absolutely delighted.
“Just 10% of restaurants in the UK gain one Rosette or more, with the AA seeking outstanding cooking, chefs who use ingredients sympathetically, good judgement with flavours and seasoning, and a high level of front of house service.”
First introduced in 1956, the AA’s Rosette Award scheme was the first UK-wide scheme for assessing the quality of food served by restaurants and hotels.
